A Breakfast Must: Bacon Pancakes

My friend Jason forwarded me this simple recipe and hopefully I will try it out next Sunday morning. Maybe I will impress my parents and boyfriend with something that looks complicated but that actually is not 😀

Ingredients:

Streaky bacon

1 1/4 cup unbleached all-purpose flour

3 tsp. baking powder

1 Tblsp. sugar

1/2 tsp. salt

1 beaten egg

1 cup milk

2 Tblsp. salad oil

Directions:

Mix together the dry ingredients.

Combine to the above mixture a beatenegg, milk and salad oil and stir until moist.

Remove the fat from streaky bacon and then fry the bacon.

When ready, pour batter on bacon.

When bubbles form on top, turn it on other side.

This makes about 8 4-inch pancakes.(Add 2 tblsp. of milk to make thinner pancakes.)

One other tip that Jason gave me was that to add maple syrup on top
