I love cakes! My favourite being the classic carrot cake. The first time I tried it I was amazed by its delicious taste and great texture. For those of you who are a bit sceptic, vegetables do make a tasty cake!
This week a colleague of mine had her birthday and her mother prepared this delicious pumpkin cake and sharing her recipe is a must!
150 g sugar
250 g flour
100 ml oil
50 ml water
150 g pumpkin, chopped
1/4 teaspoon bicarbonate of soda
1 teaspoon baking powder
1/4 teaspoon powdered cloves (imsiemer tal-qronfol)
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
100 g chocolate chips
1. Pre-heat the oven to approx. 300 degrees Celsius.
2. Mix sugar, eggs and oil. Add pumpkin and water.
3. In a separate bowl, mix bicarbonate of soda flour, baking powder, cloves, cinnamon, nutmeg and salt. Add the pumpkin mixture. Add chocolate chips and mix everything together.
4. Cook for 20 – 25 minutes.
Just try it! You would be begging for more! 😀
